Fruit and Flax Muffins


1.5 cups of whole wheat flour ,  3/4 Cup flaxseed meal, 3/4 cup oat bran, 1 cup brown sugar, 2tsp baking soda, 1tsp baking powder, 1/2 tsp salt, 2 tsp cinnamon.

Add to above mixture:

1.5 cups shredded carrots, 1.5 cups peeled and diced apples, .5 cup craisins.

Once mixed thorougly, add:

3/4 cup of milk, 2 egg whites, 1 tsp vanilla.

Stir just until moistened. Pour into buttered muffin tin, bake at 350 for 15-20 minutes, makes 2 dozen.

*Note: I have tried it with regular flour as well and it tastes the same as with the whole wheat flour, which is better for you. -Original recipe calls for raisins and nuts, but we just use craisins. -I have made it with .5 cup of splenda and .5 cup of brown sugar. You can taste the splenda but it’s not too bad – I never have Oat bran in the house, so I just use packets of regular instant oatmeal, or the cinnamon roll oatmeal (which means that I don’t add additional cinnamon and I subtract .25 cup of the brown sugar).
